- 2 ripe bananas
- 2 eggs
- 1/4 cup almond flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp olive oil
- Salt, to taste
- Honey or maple syrup, for serving (optional)
1. In a medium bowl, mash the bananas until smooth.
2. Add in the eggs, almond flour, baking powder, cinnamon, vanilla extract, and a pinch of salt. Mix until well combined.
3. Heat a non-stick pan over medium heat and add in the olive oil.
4. Using a 1/4 cup measuring scoop, pour the pancake batter onto the pan.
5. Cook for 2-3 minutes on one side, until bubbles start to form on the surface. Flip and cook for an additional 1-2 minutes on the other side.
6. Repeat with the remaining pancake batter.
