Herby orzo & lemon salad

Description

Make this summery orzo salad packed with herbs and lemon for a seasonal side. Leftovers make a great lunch the next day

Ingredient

- 1 cup orzo pasta

- 1 lemon

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- Salt and pepper, to taste

- Optional: fresh parsley or basil for garnish (if available)

Direction

Instructions:
1. Cook the orzo pasta according to package instructions. Drain and set aside.

2. In a small bowl, mix together the juice of half a lemon, olive oil, oregano, thyme, salt, and pepper. Set aside.

3. In a large mixing bowl, add the cooked orzo and pour the lemon-herb dressing over it. Mix well until the orzo is evenly coated.

4. Cut the remaining half of the lemon into small wedges and add them to the orzo mixture.

5. If desired, you can add a handful of chopped fresh parsley or basil for an extra burst of flavor and color.

6. Serve the herby orzo and lemon salad immediately, or chill it in the fridge for a few hours for the flavors to develop even more. Enjoy as a refreshing side dish or as a light lunch.
