Ingredient

- 1 pound boneless, skinless chicken breast

- 1/4 cup honey

- 1/4 cup chipotle peppers in adobo sauce

- 8 oz pasta (any variety)

- 2 tablespoons olive oil

- Salt and pepper to taste

- Optional toppings: grated parmesan cheese, chopped fresh herbs (such as parsley or cilantro)

Direction

1. Begin by preparing the chicken. Cut the chicken breast into bite-sized pieces and season with salt and pepper.

 

2. In a small bowl, mix together the honey and chipotle peppers in adobo sauce. Set aside.

 

3. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, add the chicken to the skillet and cook for 4-5 minutes, or until fully cooked and lightly browned on the outside.

 

4. Once the chicken is cooked, remove it from the skillet and set it aside on a plate.

 

5. In the same skillet, add the remaining 1 tablespoon of olive oil and heat over medium heat. Add the cooked chicken back to the skillet and pour the honey chipotle mixture over the chicken. Stir to coat the chicken in the sauce and cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken.

 

6. While the chicken is cooking, prepare the pasta according to package instructions. Drain the cooked pasta and set aside.

 

7. Once the sauce has thickened, remove the skillet from the heat. Add the cooked pasta to the skillet and stir to coat the pasta in the sauce.

 

8. Serve the Honey Chipotle Chicken Pasta in a bowl and top with grated parmesan cheese and chopped herbs, if desired.
