I think we can all agree that huevos rancheros is a top-tier breakfast, right? To get this perfect dish, all you have to do is place all the ingredients in a pan and pop it right in the oven. Twenty-five minutes later, you have the perfect breakfast!
- 6 eggs
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish with olive oil.
2. In a small bowl, mix together the cumin, chili powder, garlic powder, salt and pepper. Set aside.
3. In the prepared baking dish, spread a layer of black beans on the bottom.
4. Pour the salsa over the beans, making sure to spread it evenly.
5. Crack the eggs over the salsa, spacing them out evenly.
6. Sprinkle the seasoning mixture over the eggs and salsa.
7. Top with shredded cheese and diced avocado.
8. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and the cheese is melted and bubbly.
9. Take the dish out of the oven and let it cool for a few minutes.
10. Garnish with chopped cilantro and serve hot.
