Enjoy this bulgur wheat salad as a vegan main, or a side dish to serve with a leg of lamb, chops or roasted aubergine
- 1 cup kisir (bulgur wheat)
- 1 cup boiling water
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 1/2 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh dill
- 1/2 cup chopped tomatoes
- 1/2 cup chopped cucumber
- 1/2 cup chopped green onions
- Salt and pepper to taste
- Dried spices: cumin, red pepper flakes, paprika, and sumac (optional)
Instructions:
1. In a large bowl, add the kisir and pour the boiling water over it. Give it a quick stir and cover the bowl with a clean kitchen towel. Let it sit for 15 minutes or until all the water is absorbed.
2. In the meantime, chop the parsley, mint, dill, tomatoes, cucumber, and green onions. Set aside.
3. Once the kisir is ready, fluff it with a fork and add in the olive oil, lemon juice, and a pinch of salt and pepper. Mix well.
4. Now it's time to add in the chopped vegetables and herbs. Mix everything together until well combined.
5. If you want to add some extra flavor, you can sprinkle in some dried spices like cumin, red pepper flakes, paprika, and sumac. This step is optional, but it will add a nice kick to your salad.
6. Taste and adjust the seasoning as needed. You can add more lemon juice or olive oil if desired.
7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving. This will allow the flavors to develop and the salad to chill.
8. When ready to serve, give the kisir a quick stir and garnish with some extra herbs on top. You can also drizzle some olive oil and lemon juice for added freshness.
