- 1/2 cup unsalted butter, softened

- 1 tablespoon dried lavender

- 1/4 teaspoon salt

- 2 tablespoons olive oil

- 1 teaspoon vanilla extract

- Additional dried lavender for topping (optional)

Direction

1. Preheat your oven to 350°F (180°C).

2. In a mixing bowl, combine the all-purpose flour, sugar, dried lavender, and salt. Mix well.

3. Add in the softened butter, olive oil, and vanilla extract to the dry ingredients. Use a pastry cutter or your hands to mix everything together until a dough forms.

4. On a floured surface, roll out the dough to about 1/4 inch thickness. You can use a rolling pin or simply press the dough with your hands.

5. Use a cookie cutter of your choice to cut out the biscuits. You can also use a knife to cut the dough into squares or rectangles.

6. Place the biscuits on a baking sheet lined with parchment paper.

7. Optional: sprinkle some additional dried lavender on top of the biscuits for extra flavor and a beautiful presentation.

8. Bake the biscuits for 12-15 minutes, or until the edges are lightly golden.

9. Once done, remove the biscuits from the oven and let them cool on a wire rack.

10. Serve and enjoy your delicious lavender shortbread biscuits with a cup of tea or coffee. You can also store them in an airtight container for up to a week.
