Lentil salad with tahini dressing

Pack four of your 5-a-day into each portion of this healthy lentil and sweet potato salad, which provides calcium, iron, folate, vitamin C and fibre.

Ingredient

- 1 cup lentils

- 1 red bell pepper, diced

- 1 cucumber, diced

- 1/4 red onion, diced

- 1/4 cup chopped fresh parsley

- 1/4 cup olive oil

- Salt and pepper

- 1 tsp dried oregano

- 1 tsp garlic powder

- 1/4 cup tahini

- 1/4 cup water

Direction

Instructions:
1. In a medium pot, bring 2 cups of water to a boil. Add in the lentils and let them cook for 15-20 minutes, or until they are tender. Drain and set aside to cool.

2. In a small bowl, mix together the olive oil, salt, pepper, dried oregano, and garlic powder.

3. In a large mixing bowl, combine the cooked lentils, diced red bell pepper, cucumber, red onion, and chopped parsley.

4. Pour the olive oil mixture over the lentil mixture and toss until everything is well coated.

5. In a separate small bowl, mix together the tahini and water until it forms a smooth, pourable dressing.

6. Drizzle the tahini dressing over the lentil salad and mix well.

7. Serve the lentil salad immediately or refrigerate for 30 minutes to let the flavors marinate.
