This Mediterranean baked cod with lemon, deliciously seasoned with fresh Mediterranean herbs, garlic, and lemon, is ready in 25 minutes, start to finish. Serve with your favorite potato dish, and a green vegetable or salad, and your meal is done.
- 4 cod fillets
- 2 lemons
- Olive oil
- Salt
- Black pepper
- Garlic powder
- Dried oregano
- Dried thyme
- Dried rosemary
1. Preheat your oven to 375°F (190°C).
2. Start by preparing the seasoning mixture. In a small bowl, combine 2 tablespoons of olive oil, 1 teaspoon of salt, 1/2 teaspoon of black pepper, 1 teaspoon of garlic powder, 1 teaspoon of dried oregano, 1/2 teaspoon of dried thyme, and 1/2 teaspoon of dried rosemary. Mix everything together until well combined.
3. Take the 4 cod fillets and pat them dry with a paper towel. Place them in a baking dish and brush the seasoning mixture over each fillet, making sure to coat both sides evenly.
4. Cut one lemon into thin slices and place them on top of the cod fillets.
5. Cut the other lemon in half and squeeze the juice over the fillets.
6. Drizzle a little bit of olive oil on top of the fillets.
7. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
8. After 20 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the cod is cooked through and flakes easily with a fork.
9. Once done, remove from the oven and let it cool for a few minutes.
