These mini pork and ham pies with hot water crust pastry are perfect for picnics or if you’re on-the-go. Serve with a quick and easy piccalilli.

Ingredient

- 1 package of pre-made mini pork pies

- Olive oil

- Salt

- Pepper

- 1 cup diced cucumber

- 1/2 cup diced red bell pepper

- 1/4 cup diced red onion

- 1/4 cup white vinegar

- 1 tablespoon honey

- 1 teaspoon mustard powder

- 1 teaspoon dried turmeric

- 1/2 teaspoon dried ginger

- 1/4 teaspoon ground cumin

Direction

1. Preheat your oven to 375°F (190°C).

2. Place the mini pork pies on a baking sheet and lightly brush them with olive oil. Sprinkle with a pinch of salt and pepper.

3. Bake the pork pies for 15-20 minutes, or until the crust is golden brown and the filling is cooked through.

4. While the pork pies are baking, prepare the quick piccalilli. In a small saucepan, combine the diced cucumber, red bell pepper, red onion, white vinegar, honey, mustard powder, dried turmeric, dried ginger, and ground cumin.

5. Cook over medium heat, stirring occasionally, until the vegetables are tender and the liquid has reduced, about 10-15 minutes.

6. Remove the pork pies from the oven and let them cool for a few minutes.

7. Serve the mini pork pies with a spoonful of the quick piccalilli on top. The tangy and spicy flavors of the piccalilli will complement the savory pork pies perfectly.
