Not Your Mama's Rotel Dip

This is not your mama’s Rotel dip. Elevate your old standby with a few tasty additions—taco seasoning, green onions, cilantro, and lime juice—for maximum flavor. You can serve it with tortilla chips, and it’s amazing with celery sticks, too.


- 1 can (10 oz) of diced tomatoes and green chilies (such as Rotel)

- 1/2 cup cream cheese, softened

- 1/4 cup shredded cheddar cheese

- 1 tablespoon olive oil

- 1/4 teaspoon garlic powder

- 1/4 teaspoon onion powder

- 1/4 teaspoon dried oregano

- Salt and pepper to taste


1. Preheat your oven to 375°F (190°C).

2. In a medium bowl, mix together the diced tomatoes and green chilies, cream cheese, shredded cheddar cheese, olive oil, garlic powder, onion powder, and dried oregano.

3. Season with salt and pepper to taste.

4. Transfer the mixture to a small baking dish.

5. Bake for 20-25 minutes, until the cheese is melted and the dip is heated through.

6. Serve hot with tortilla chips or your favorite dipping accompaniments.
