- 4 chicken breasts
- 1 bunch asparagus
- 2 cloves of garlic
- 1 lemon
- Olive oil
- Salt
- Pepper
- Italian seasoning
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, mix together 2 tablespoons of olive oil, 2 cloves of minced garlic, the juice and zest of 1 lemon, and a pinch of salt and pepper.
3. Place the chicken breasts in a large bowl and pour the lemon garlic mixture over them. Make sure the chicken is coated evenly.
4. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat.
5. Add the chicken breasts to the skillet and cook for 5 minutes on each side, or until golden brown.
6. While the chicken is cooking, wash and trim the ends of the asparagus.
7. Remove the chicken from the skillet and set aside on a plate.
8. In the same skillet, add the asparagus and sauté for 2-3 minutes. Season with a pinch of salt, pepper, and Italian seasoning.
9. Place the chicken back in the skillet on top of the asparagus.
10. Place the skillet in the oven and bake for 15-20 minutes, or until the chicken is fully cooked and the asparagus is tender.
11. Serve the lemon garlic chicken and asparagus hot and garnish with additional lemon slices or zest, if desired.
