Ingredient

- 1 lb shrimp, peeled and deveined

- 8 oz spaghetti or linguine

- 2 cloves garlic, minced

- 1 lemon, juiced and zested

- 1/4 cup olive oil

- Salt and pepper, to taste

- 1 tsp dried oregano

- 1 tsp dried basil

- 1 tsp dried thyme

- 1/4 cup grated Parmesan cheese

- 2 cups water or chicken broth

- Fresh parsley, chopped (optional)

Direction

1. In a large pot, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1-2 minutes.

 

2. Add the shrimp to the pot and season with salt, pepper, oregano, basil, and thyme. Cook for 2-3 minutes until the shrimp turns pink.

 

3. Pour in the water or chicken broth and add in the spaghetti or linguine. Stir to combine.

 

4. Bring the mixture to a boil, then reduce heat to medium-low. Cover the pot and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked and the liquid has been absorbed.

 

5. Once the pasta is cooked, add in the lemon juice and zest. Stir to combine and allow the flavors to meld together for a few minutes.

 

6. Sprinkle in the Parmesan cheese and stir until it melts and coats the pasta. Taste and adjust seasoning if needed.
