Description

This deliciously simple meal can all be prepared in one pan for minimum washing-up

Ingredient

- 4 large potatoes

- 4 eggs

- Olive oil

- Salt

- Pepper

- Dried oregano

- Dried thyme

- Paprika

Direction

Instructions:

1. Preheat your oven to 400°F (200°C).

2. Wash and peel the potatoes, then cut them into thick French fry-like strips.

3. Place the potato strips in a large mixing bowl and drizzle with olive oil. Toss to coat evenly.

4. Sprinkle with salt, pepper, dried oregano, dried thyme, and paprika. Use your hands to mix and evenly distribute the seasonings.

5. Line a baking sheet with parchment paper and spread the seasoned potato strips in a single layer on the sheet.

6. Bake in the preheated oven for 20 minutes, flipping halfway through.

7. While the potatoes are baking, crack the eggs into a small bowl and season with salt and pepper.

8. After 20 minutes, remove the baking sheet from the oven and make 4 small wells in the potato strips. Carefully pour an egg into each well.

9. Return the baking sheet to the oven and bake for an additional 8-10 minutes, or until the egg whites are set and the yolks are still slightly runny.

10. Once done, remove from the oven and let cool for a few minutes before serving.

11. Serve the oven-baked egg and chips hot, garnished with a sprinkle of paprika and some fresh herbs, if desired. Enjoy!
