This lovely pan-seared cod with an easy, homemade lemon aioli cooks exceptionally fast. Pair with oven roasted vegetables and couscous for a fast, but filling weeknight meal.
- 4 cod fillets
- 2 tablespoons olive oil
- Salt and pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 cup mayonnaise
- 1 tablespoon lemon juice
- 1 clove garlic, minced
1. Start by patting the cod fillets dry with a paper towel. This will help the seasoning stick to the fish better.
2. In a small bowl, mix together the garlic powder, paprika, and a pinch of salt and pepper. Rub this seasoning mixture over both sides of the cod fillets.
3. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, add the cod fillets to the skillet.
4. Let the cod cook for about 4 minutes on each side, or until the fish is cooked through and flakes easily with a fork.
5. While the cod is cooking, make the lemon aioli by mixing together the mayonnaise, lemon juice, minced garlic, and a pinch of salt and pepper in a small bowl.
6. Once the cod is done, remove it from the skillet and let it rest for a few minutes.
7. In the same skillet, add 1 more tablespoon of olive oil and heat it over medium heat. Once hot, add the cooked cod fillets back to the skillet and sear each side for about 1 minute.
8. Serve the pan-seared cod with a dollop of lemon aioli on top. You can also garnish with some fresh lemon slices and parsley for added flavor and presentation.
