Description

These pancake cups are too adorable for anyone to not enjoy for their morning breakfast!

Ingredient

- 2 cups of all-purpose flour

- 2 tablespoons of granulated sugar

- 2 teaspoons of baking powder

- 1/2 teaspoon of salt

- 2 eggs

- 1 1/2 cups of milk

- 1/4 cup of olive oil

- Cooking spray (optional)

- Seasoning and dried spices of your choice (optional)

Direction

1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well until all the dry ingredients are well combined.

 

2. In a separate bowl, beat the eggs and then add in the milk and olive oil. Whisk until the mixture is smooth and well combined.

 

3. Pour the wet mixture into the dry mixture and stir until just combined. Be careful not to over-mix as this will result in tough pancakes.

 

4. If using cooking spray, lightly coat a muffin tin with it. Otherwise, you can also use melted butter or vegetable oil.

 

5. Preheat your oven to 375°F (190°C).

 

6. Using a spoon or a ladle, fill each muffin cup about 3/4 full with the pancake batter.

 

7. If desired, you can sprinkle your choice of seasoning and dried spices over the top of the pancake batter. Some good options could be cinnamon and sugar, pumpkin spice, or mixed herbs.

 

8. Bake the pancake cups for 12-15 minutes, or until they are golden brown on top and a toothpick inserted into the center comes out clean.

 

9. Once done, remove the pancake cups from the oven and let them cool for a few minutes in the muffin tin.

 

10. Carefully remove the pancake cups from the muffin tin and place them on a wire rack to cool completely.

 

11. Serve the pancake cups warm with your favorite toppings such as maple syrup, honey, fresh fruit, or whipped cream.
