A handful of ingredients go a long way in this hearty oven-baked supper- use your favourite pasta shape, but we like rigatoni, bows or macaroni
- 1 box of pasta (any shape)
- 1 jar of pesto
- 2 medium-sized courgettes
- Olive oil
- Salt
- Black pepper
- Garlic powder
- Oregano
- Parmesan cheese (optional)
Instructions:
1. Preheat your oven to 375°F (190°C).
2. Cook the pasta according to the package instructions. Drain and set aside.
3. While the pasta is cooking, wash and slice the courgettes into thin discs.
4. In a pan, heat 1 tablespoon of olive oil over medium heat. Add the courgette slices and season with a pinch of salt, black pepper, garlic powder, and oregano. Sauté for 5-7 minutes until slightly softened. Remove from heat and set aside.
5. In a separate bowl, mix the cooked pasta with ½ cup of pesto until fully coated.
6. Take a baking dish and spread a thin layer of pesto on the bottom. Add a layer of the pesto-coated pasta on top.
7. Arrange a layer of the sautéed courgette slices on top of the pasta.
8. Repeat the layers until all the ingredients are used up, ending with a layer of the pesto-coated pasta.
9. If desired, sprinkle some grated parmesan cheese on top.
10. Cover the dish with foil and bake in the preheated oven for 20-25 minutes.
11. Remove the foil and bake for an additional 10 minutes to allow the top to become golden and crispy.
12. Serve hot and enjoy your delicious pesto & courgette pasta bake!
