Description

Do something different with salmon and make this easy seafood pasta bake with added veg. Tasty and filling, it's ideal for feeding the family

Ingredient

- 1 lb salmon filet, skin removed

- 1 lb penne pasta

- 1 cup pesto sauce

- 1/2 cup grated parmesan cheese

- 2 cloves of garlic, minced

- 1 tablespoon olive oil

- 1 teaspoon dried basil

- 1 teaspoon dried oregano

- Salt and pepper, to taste

Direction

Instructions:
1. Preheat your oven to 375°F (190°C).

2. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

3. In a large mixing bowl, combine the pesto sauce, minced garlic, dried basil, dried oregano, and a pinch of salt and pepper. Mix well until all ingredients are evenly blended.

4. Place the salmon filet on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper.

5. Spread the pesto mixture over the salmon, making sure it is evenly coated.

6. Bake the salmon in the preheated oven for 15-20 minutes, or until it flakes easily with a fork.

7. Drain any excess liquid from the cooked pasta and transfer it to a 9x13 inch baking dish.

8. Once the salmon is cooked, remove it from the oven and let it cool for a few minutes. Cut it into bite-sized pieces and add it to the baking dish with the pasta.

9. Gently toss the pasta and salmon together until well combined.

10. Sprinkle the grated parmesan cheese over the top of the pasta and salmon.

11. Cover the baking dish with aluminum foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.

12. Let the pasta bake cool for a few minutes before serving. Garnish with some extra dried oregano and grated parmesan cheese, if desired.
