- 1 pound penne pasta
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 red bell pepper, diced
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- Olive oil
- Salt and pepper
- Dried oregano
- Dried basil
Instructions:
1. Cook the penne pasta according to package instructions until al dente. Drain and rinse with cold water to stop the cooking process.
2. In a large mixing bowl, combine the cooked pasta, black beans, corn, diced red bell pepper, green onions, and cilantro.
