Ingredient

- 2 cups cooked white rice

- 1 red bell pepper, diced

- 1 yellow bell pepper, diced

- 1 green bell pepper, diced

- 1 onion, diced

- 1 cup frozen peas

- 1 cup cooked prawns

- 2 cloves garlic, minced

- 2 tablespoons olive oil

- Salt and pepper

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- 2 eggs

- Soy sauce (optional)

Direction

Instructions:
1. In a large pan or wok, heat 2 tablespoons of olive oil over medium-high heat.

2. Add the diced onions, bell peppers, and minced garlic to the pan. Cook for 3-4 minutes, until the vegetables are slightly softened.

3. Add in the frozen peas and cooked prawns. Stir and cook for an additional 2-3 minutes.

4. Season the mixture with salt, pepper, dried oregano, and dried thyme. Mix well.

5. Add in the cooked white rice and mix everything together until well combined. Cook for another 2-3 minutes.

6. Create a small well in the center of the pan and crack two eggs into it. Let the eggs cook for a minute before gently stirring them into the rice mixture.

7. Cook for an additional 2-3 minutes, until the eggs are fully cooked and mixed in with the rice.

8. Taste the rice and adjust seasoning if needed.

9. Optional: drizzle a small amount of soy sauce over the rice for added flavor.

10. Serve the rainbow fried rice hot in bowls or on plates.
