This gloriously pink rhubarb gin is a cinch to make. It tastes great on its own over ice or in a cocktail. Have a go with our easy recipe – we’ve even got a clever tip for using up the gin-soaked fruit.
- 1 cup chopped rhubarb
- 1/4 cup sugar
- 1/2 cup gin
- 1/4 cup lemon juice
- 1/4 cup club soda
- Olive oil
- Salt
- Black pepper
- Dried basil
1. In a small saucepan, combine the chopped rhubarb, sugar, and 1/4 cup of water. Cook over medium heat, stirring occasionally, until the rhubarb breaks down and becomes a jam-like consistency, about 10 minutes.
2. Strain the rhubarb mixture through a fine-mesh strainer, pressing down on the solids to extract as much liquid as possible. Discard the solids and set the rhubarb syrup aside.
3. In a cocktail shaker, combine the gin, lemon juice, and 1 tablespoon of the rhubarb syrup. Add a few ice cubes and shake vigorously.
4. Rub a lemon wedge around the rim of a glass and dip it in a mixture of salt, black pepper, and dried basil. This will add a savory twist to the cocktail.
5. Strain the cocktail into the prepared glass and top with club soda. Give it a gentle stir.
6. To add an extra layer of flavor, drizzle a small amount of olive oil over the top of the drink. This will add a subtle richness to the cocktail.
7. Garnish with a lemon twist or a few fresh basil leaves for a pop of color and aroma.
