Brown rice—higher in fiber and other nutrients than its white counterpart—is the perfect vehicle for this quick, protein-heavy lunch.
- 1 cup white rice
- 2 eggs
- 1 avocado
- Olive oil
- Salt
- Black pepper
- Garlic powder
- Paprika
1. Begin by cooking the rice according to package instructions. Once cooked, set aside and keep warm.
2. In a small frying pan, heat 1 tablespoon of olive oil over medium heat.
3. Crack 2 eggs into the pan and sprinkle with a pinch of salt and black pepper. Cook for 2-3 minutes, until the whites are set but the yolks are still runny.
4. While the eggs are cooking, slice the avocado in half and remove the pit. Slice the avocado into thin slices.
5. Once the eggs are cooked, remove them from the pan and set aside.
6. In the same pan, add another tablespoon of olive oil and heat over medium heat.
7. Add the cooked rice to the pan and season with 1 teaspoon of garlic powder and 1 teaspoon of paprika. Stir to coat the rice in the spices and cook for 2-3 minutes, until heated through.
8. To assemble the rice bowl, place the seasoned rice in the bottom of a bowl. Top with the fried eggs and avocado slices.
9. Drizzle with a little bit of olive oil and sprinkle with a pinch of salt and black pepper.
