Rice Cooker Cinnamon Pancake

Description

First off, I didn't even know you could make a pancake in a rice cooker!!! And second, now that I know this, why wouldn't I wanna treat myself to one huge pancake at the start of the day!

Ingredient

 1 cup all-purpose flour

- 1 tablespoon baking powder

- 1 teaspoon ground cinnamon

- 1 tablespoon sugar

- 1 cup milk

- 1 egg

- 2 tablespoons olive oil

- Salt and pepper

Direction

1. In a medium bowl, whisk together the flour, baking powder, ground cinnamon, sugar, and a pinch of salt and pepper.

2. In a separate small bowl, beat the egg and then add in the milk and olive oil. Mix until well combined.

3. Slowly pour the wet mixture into the dry mixture, stirring until just combined. Be careful not to over mix the batter as it can make the pancakes tough.

4. Plug in your rice cooker and turn it on to the "cook" setting.

5. Once the rice cooker has heated up, lightly oil the cooking surface with olive oil.

6. Pour about 1/4 cup of batter onto the cooking surface of the rice cooker. Close the lid and let it cook for about 3-4 minutes.

7. After 3-4 minutes, open the lid and flip the pancake over using a spatula. Close the lid and let it cook for an additional 2-3 minutes.

8. Once the pancake is golden brown on both sides, remove it from the rice cooker and place it on a plate.

9. Repeat the process with the remaining batter, re-oiling the cooking surface as needed.

10. Serve the pancakes warm with your favorite toppings such as maple syrup, honey, or fresh fruit.
