Roast Beef and Cheddar Puff Pastry Pockets

To make these puff pastry beef and Cheddar pockets, puff pastry is rolled and cut into 4-inch squares to form an "envelope" for tasty beef and Cheddar bites. Make them larger or smaller, if you wish, and use any sandwich spread you prefer. Serve warm, for a tasty snack or appetizer.


- 1 sheet of puff pastry

- 1/2 lb roast beef, sliced

- 1/2 cup shredded cheddar cheese

- 1 tablespoon olive oil

- Salt and pepper


1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.


2. In a small bowl, mix together the olive oil, salt and pepper.


3. Lay out the sheet of puff pastry on a floured surface. Using a rolling pin, roll out the pastry sheet to about 1/4 inch thickness.


4. Cut the pastry sheet into 4 equal squares.


5. In the center of each square, place a few slices of roast beef and a sprinkle of shredded cheddar cheese.


6. Brush the edges of the pastry squares with the olive oil mixture.


7. Carefully fold the corners of the pastry over the filling, creating a triangle shape. Use a fork to press down and seal the edges of the pastry.


8. Place the pastry pockets on the lined baking sheet and brush the tops with the remaining olive oil mixture.


9. Bake in the preheated oven for 15-20 minutes, until the pastry is golden brown and puffed up.
