A platter packed with veg perfect for entertaining health-conscious guests
- 1 head of garlic
- Olive oil
- Salt
- Black pepper
- 1 cup of plain Greek yogurt
- 1 teaspoon of dried parsley
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of dried basil
- Assorted vegetables (such as carrots, cucumbers, bell peppers, cherry tomatoes)
1. Preheat your oven to 400 degrees Fahrenheit.
2. Cut off the top of the head of garlic to expose the cloves. Place it on a sheet of aluminum foil and drizzle with olive oil. Sprinkle with a pinch of salt and black pepper.
3. Wrap the garlic in the aluminum foil and place it on a baking sheet. Roast in the oven for 30-35 minutes, until the garlic is soft and golden brown.
4. While the garlic is roasting, prepare your vegetable platter. Wash and cut your vegetables into bite-sized pieces and arrange them on a platter or plate.
5. In a small mixing bowl, combine the Greek yogurt, dried parsley, oregano, thyme, and basil. Mix well until the herbs are evenly distributed.
6. Once the roasted garlic is done, remove it from the oven and let it cool for a few minutes. Then, squeeze the roasted garlic cloves out of the skin into the yogurt mixture. Mix well to combine.
7. Taste the dip and adjust the seasoning as desired. You can add more salt, pepper, or dried herbs to your liking.
8. Serve the roasted garlic dip alongside the vegetable platter. Enjoy as a healthy and flavorful appetizer or snack!
Note: You can also make this dip ahead of time and store it in the refrigerator until ready to serve. Just make sure to let it sit at room temperature for a few minutes before serving to allow the flavors to fully develop.
