Rum and raisin spotted dick

You can’t get a more traditional British pud than spotted dick – something that’s fallen out of fashion in recent years. We’re bringing it back with an up-to date makeover, complete with rum-soaked raisins and a rum syrup. Grab a spoon and dig in.


- 1 cup all-purpose flour

- 1/2 cup white sugar

- 1/4 cup raisins

- 1 tsp baking powder

- 1/4 tsp salt

- 1/4 cup rum

- 1/4 cup milk

- 2 tbsp olive oil

- 1 tsp vanilla extract

- 1/4 tsp nutmeg

- 1/4 tsp cinnamon

- Olive oil for greasing the pan

- Vanilla ice cream (optional)


1. In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 cup of white sugar, 1 tsp of baking powder, 1/4 tsp of salt, 1/4 tsp of nutmeg, and 1/4 tsp of cinnamon.

2. Mix well and then add in 1/4 cup of raisins. Toss the raisins in the flour mixture to make sure they are coated.

3. In a separate bowl, mix together 1/4 cup of rum, 1/4 cup of milk, 2 tbsp of olive oil, and 1 tsp of vanilla extract.

4. Slowly pour the wet ingredients into the dry ingredients, mixing until a dough forms. If the dough is too dry, you can add a little more milk.

5. Grease a small baking dish with olive oil and transfer the dough into the dish.

6. Cover the dish with aluminum foil and bake in a preheated oven at 375°F for 20 minutes.

7. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown.

8. Let the Rum and Raisin Spotted Dick cool for a few minutes before serving.

9. Optional: Serve with a scoop of vanilla ice cream on top. Enjoy your delicious and easy-to-make dessert!
