This everyday, freeze-ahead supper combines tomatoes with a creamy cheese sauce - a perfect family meal
- 1 package of sausage (about 1 pound)
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- 1 teaspoon of dried thyme
- 1 teaspoon of salt
- ½ teaspoon of black pepper
- 1 pound of pasta
- 2 cups of fresh spinach
- Olive oil
- Parmesan cheese (optional)
Instructions:
1. Preheat your oven to 375 degrees Fahrenheit.
2. In a large pot, cook the pasta according to package instructions. Drain and set aside.
3. In a separate pan, heat a tablespoon of olive oil over medium heat.
4. Add the sausage to the pan and cook until browned, breaking it into small pieces with a wooden spoon.
5. Once the sausage is cooked, remove it from the pan and set it aside on a plate.
6. In the same pan, add the diced onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.
7. Add the can of diced tomatoes, chicken broth, dried oregano, dried basil, dried thyme, salt, and black pepper to the pan. Stir to combine.
8. Let the mixture simmer for about 10 minutes, stirring occasionally.
9. Add the cooked sausage back to the pan and let it cook for an additional 5 minutes.
10. In a large baking dish, spread a layer of cooked pasta on the bottom.
11. Top with a layer of the sausage ragu mixture.
12. Top the ragu layer with a layer of fresh spinach.
13. Repeat these layers until all of the ingredients are used, ending with a layer of pasta on top.
14. Drizzle a tablespoon of olive oil over the top of the pasta.
15. If desired, sprinkle grated Parmesan cheese on top of the pasta.
16. Cover the baking dish with foil and bake for 20 minutes.
17. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown and bubbly.
18. Let the pasta bake cool for 5-10 minutes before serving. Enjoy!
