Slow Cooker Berry Breakfast Quinoa

This Slow Cooker Berry Breakfast Quinoa is the perfect way to start your mornings and can easily be made by using just a few simple ingredients!

Ingredient

 1 cup quinoa

- 1 cup mixed berries (fresh or frozen)

- 1 cup almond milk

- 1 tbsp honey

- 1 tbsp olive oil

- 1 tsp cinnamon

- 1 tsp vanilla extract

- Pinch of salt

- Optional toppings: chopped nuts, shredded coconut, extra berries

Direction

1. Rinse the quinoa in a fine-mesh strainer and place it in the slow cooker.

2. In a small bowl, mix together the almond milk, honey, olive oil, cinnamon, vanilla extract, and salt. Pour the mixture over the quinoa in the slow cooker.

3. Add in the mixed berries and gently stir to evenly distribute them.

4. Set the slow cooker on low heat and cook for 4-6 hours or on high heat for 2-3 hours.

5. Once the quinoa is cooked and the liquid is absorbed, fluff it with a fork.

6. Serve the berry quinoa in bowls and top with chopped nuts, shredded coconut, and additional berries if desired.
