Slow Cooker Parmesan Garlic Chicken and Potatoes

recipe Detail

Description

This crock pot Parmesan garlic chicken and potatoes is so quick to assemble using prepared garlic Parmesan sauce, and the result is a creamy, savory dish of tender, juicy chicken and indulgent, cheesy potatoes.

Ingredient

- 4 chicken breasts

- 4 medium sized potatoes

- 1/2 cup grated parmesan cheese

- 4 cloves of garlic, minced

- 2 tablespoons olive oil

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- 1 teaspoon dried rosemary

- Salt and pepper, to taste

Direction

1. Start by washing and scrubbing the potatoes. Cut them into small cubes and place them in the bottom of your slow cooker.

2. In a small bowl, mix together the minced garlic, parmesan cheese, and 1 tablespoon of olive oil.

3. Place the chicken breasts on top of the potatoes in the slow cooker. Season with salt and pepper.

4. Spread the garlic and parmesan mixture on top of the chicken breasts, making sure to cover them completely.

5. In the same small bowl, mix together the remaining 1 tablespoon of olive oil, dried oregano, dried thyme, and dried rosemary. Drizzle this mixture over the chicken and potatoes.

6. Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours.

7. Once the cooking time is up, remove the lid and check if the chicken and potatoes are fully cooked. The chicken should reach an internal temperature of 165°F and the potatoes should be fork-tender.

8. If the chicken and potatoes are fully cooked, remove them from the slow cooker and place them on a serving dish. Use a slotted spoon to transfer the potatoes to the dish, as they may have absorbed some of the liquid from the slow cooker.

9. Drizzle any remaining sauce from the slow cooker over the chicken and potatoes for extra flavor.

10. Serve the slow cooker parmesan garlic chicken and potatoes hot and enjoy! You can also garnish with additional grated parmesan cheese or fresh herbs, if desired.
