Slow Cooker Pumpkin Steel Cut Oats are creamy steel cut oats packed with pumpkin and warm pumpkin spice. Cook overnight for a hearty breakfast on busy mornings!

Ingredient

- 1 cup steel cut oats

- 1 cup canned pumpkin puree

- 3 cups water

- 1 tsp olive oil

- 1 tsp pumpkin pie spice

- 1/4 tsp salt

- 1/4 cup maple syrup (optional)

- 1/4 cup chopped nuts or dried fruit for topping (optional)

Direction

1. In a slow cooker, add 1 cup of steel cut oats and 3 cups of water. Stir in 1 tsp of olive oil and 1/4 tsp of salt.

2. Next, stir in 1 cup of canned pumpkin puree and 1 tsp of pumpkin pie spice.

3. Optional: For a sweeter taste, add 1/4 cup of maple syrup to the mixture.

4. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

5. Stir the oatmeal occasionally to prevent it from sticking to the bottom of the slow cooker.
