Try Diana Henry's ultimate storecupboard supper – combine smoked anchovies and garlicky chilli breadcrumbs with spaghetti, and top with a fried egg

Ingredient

- 1 package of spaghetti

- 1 can of smoked anchovies

- 1/2 cup breadcrumbs

- 1 red chilli, diced

- 1 egg

- Olive oil

- Salt and pepper

- Dried oregano

- Dried parsley

Direction

Instructions:
1. Cook the spaghetti according to package instructions in a pot of boiling salted water.

2. While the pasta is cooking, heat a drizzle of olive oil in a pan over medium heat.

3. Add the diced red chilli and cook for 1-2 minutes until fragrant.

4. Drain the can of smoked anchovies and add them to the pan with the chilli. Use a spoon to break up the anchovies into smaller pieces.

5. Cook for another 1-2 minutes until the anchovies start to brown and become crispy.

6. In a separate small pan, heat a drizzle of olive oil over medium heat.

7. Crack an egg into the pan and fry until the whites are set but the yolk is still runny. Season with salt and pepper.

8. In the pan with the anchovies and chilli, add the breadcrumbs and a pinch of dried oregano and parsley. Stir to combine and cook until the breadcrumbs are golden brown and crispy.

9. Once the spaghetti is cooked, drain it and add it to the pan with the anchovy and breadcrumb mixture. Toss everything together to coat the pasta with the flavors.

10. Plate the spaghetti and top with the fried egg. Serve hot and enjoy your flavorful and simple spaghetti dish!
