- 2 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened
- 1/4 cup olive oil
- 1 egg
- 1/4 cup milk
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves

1. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/4 cup of sugar, 1 tsp of baking powder, 1/4 tsp of salt, 1 tsp of ground cinnamon, 1/4 tsp of ground nutmeg, and 1/4 tsp of ground cloves. Mix well with a whisk or fork.
2. Add 1/4 cup of softened unsalted butter to the dry ingredients and mix until crumbly.
3. In a separate bowl, beat 1 egg and add it to the dry ingredients along with 1/4 cup of olive oil and 1/4 cup of milk. Mix well until a dough forms.
4. On a clean surface, dust some flour and roll out the dough to about 1/4 inch thickness.
5. Using a cookie cutter or a glass, cut out rounds of dough. You can also use a knife to cut the dough into small triangles if you prefer a more traditional shape.
6. Heat a large skillet over medium heat and add a small amount of olive oil.
7. Once the oil is hot, place the dough rounds in the skillet and cook for about 2-3 minutes on each side, until golden brown.
8. Once cooked, transfer the Welsh cakes to a plate lined with paper towels to absorb any excess oil.
