Description

Eggs form the base of these healthy wraps and they're filled with spiced chicken, black beans, tomatoes, coriander and red onion for a filling, tasty lunch

Ingredient

- 4 chicken breasts

- 4 large eggs

- 4 large flour tortillas

- Olive oil

- Salt

- Black pepper

- Garlic powder

- Onion powder

- Paprika

- Cumin

- Chili powder

- Shredded cheese (optional)

- Salsa (optional)

- Sour cream (optional)

Direction

Instructions:
1. Preheat your oven to 375°F (190°C).

2. In a small bowl, mix together 1 teaspoon each of salt, black pepper, garlic powder, onion powder, paprika, cumin, and chili powder. This will be your spice blend.

3. Place the chicken breasts on a cutting board and use a meat tenderizer or rolling pin to gently flatten them to about 1/2 inch thickness.

4. Rub the spice blend all over the chicken breasts, making sure to cover both sides evenly.

5. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil is hot, add the chicken breasts to the skillet and cook for about 4-5 minutes on each side, or until they are fully cooked and no longer pink inside.

6. While the chicken is cooking, whisk the eggs in a bowl and season with a pinch of salt and black pepper.

7. In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Pour the eggs into the skillet and cook, stirring occasionally, until they are scrambled and fully cooked.

8. Warm the flour tortillas in the microwave for about 15-20 seconds or on a skillet over medium heat for a minute on each side.

9. To assemble the wraps, place a tortilla on a flat surface and add a layer of scrambled eggs in the middle. Then, place a cooked chicken breast on top of the eggs.

10. Optional: Sprinkle some shredded cheese on top of the chicken and then add a spoonful of salsa and a dollop of sour cream.

11. Roll up the tortilla tightly, tucking in the sides as you go. Repeat with the remaining tortillas and ingredients.

12. Place the wraps on a baking sheet and bake in the preheated oven for 8-10 minutes, or until the tortillas are slightly crispy.

13. Serve hot and enjoy your delicious and easy spiced chicken egg wraps! You can also add any additional toppings or sauces of your choice.
