Spicy Salsa

Description

This salsa is a spicy fresh addition to any Mexican meal and it's great on breakfast burritos. If you'd like to decrease the heat of the jalapenos, remove the seeds and membranes from the peppers before dicing them.

Ingredient

 4 chicken breasts

- 2 tomatoes

- 1 onion

- 2 cloves of garlic

- Olive oil

- Salt

- Black pepper

- Chili powder

- Cumin

- Paprika

- Garlic powder

- Onion powder

- Dried oregano

- Dried parsley

Direction

1. Preheat your oven to 375°F (190°C).

2. Start by dicing the tomatoes and onion and mincing the garlic cloves. Set aside.

3. In a small bowl, mix together 1 teaspoon each of chili powder, cumin, and paprika. Add a pinch of salt, black pepper, garlic powder, onion powder, dried oregano, and dried parsley. This will be your spice mix.

4. Take the chicken breasts and brush them with olive oil on both sides. Sprinkle the spice mix on both sides of the chicken, rubbing it in to evenly coat.

5. Heat up a skillet over medium-high heat and add a tablespoon of olive oil. Once hot, add the chicken breasts to the skillet and cook for 3-4 minutes per side, until golden brown.

6. In a baking dish, mix together the diced tomatoes, onion, and minced garlic. Season with a pinch of salt and black pepper.

7. Place the cooked chicken breasts on top of the tomato mixture in the baking dish. Cover the dish with aluminum foil and place it in the preheated oven.

8. Bake for 20 minutes, then remove the foil and bake for an additional 10 minutes, or until the chicken is fully cooked and the tomato mixture is bubbling.

9. Take the dish out of the oven and let it cool for 5 minutes. Serve the spicy salsa chicken with your favorite side dishes, such as rice or roasted vegetables. Enjoy!
