Description

Jazz up your usual summer potato salad with a spicy sriracha and zingy lime dressing. It’s a lively addition to any barbecue that's healthy to boot

Ingredient

- 2 tbsp olive oil

- Salt and pepper

- 1 tbsp Sriracha sauce

- 1 lime

- 1 tsp dried oregano

- 1 tsp dried basil

- 1 tsp garlic powder

- 1 tsp onion powder

Direction

Instructions:
1. Peel and dice the potatoes into bite-sized pieces.

2. In a pot, add the diced potatoes and enough water to cover them. Bring to a boil and let them cook for 8-10 minutes, until they are fork-tender.

3. Meanwhile, in a small bowl, mix together the olive oil, Sriracha sauce, juice from half a lime, and all the dried spices.

4. Drain the potatoes and place them in a large mixing bowl. Pour the Sriracha and lime mixture over the potatoes and gently toss until all the potatoes are evenly coated.

5. Preheat a grill or grill pan to medium-high heat.

6. Once heated, place the potatoes on the grill and cook for 2-3 minutes on each side, until they are lightly charred and crispy.

7. Remove the potatoes from the grill and place them back in the mixing bowl. Squeeze the remaining half of the lime over the potatoes and toss gently to combine.

8. Taste and adjust seasoning as needed.

9. Serve the Sriracha and lime potato salad warm or at room temperature. Enjoy!
