Rustle up this protein-packed salad in just 25 minutes. Made with sirloin steak, fried aubergine and feta in a zesty dressing, it makes a great summer dish
- 1 lb steak
- 1 large aubergine
- 2 tablespoons olive oil
- Salt and pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 garlic clove, minced
- 4 cups mixed greens
Instructions:
1. Preheat your grill or grill pan to medium-high heat.
2. Season the steak with salt, pepper, 1 teaspoon of dried oregano, and 1 teaspoon of dried thyme. Rub the seasoning into the steak on both sides.
3. Slice the aubergine into 1/4 inch rounds. Brush both sides with olive oil and season with salt and pepper.
4. Place the steak on the grill and cook for 4-5 minutes on each side for medium-rare, or adjust the cooking time according to your desired level of doneness. Remove the steak from the grill and let it rest for 5 minutes before slicing.
5. While the steak is resting, place the aubergine slices on the grill and cook for about 2-3 minutes on each side until they are lightly charred and tender.
6. In a small bowl, mix together 2 tablespoons of olive oil, minced garlic, and a pinch of salt and pepper to make a dressing.
7. In a large bowl, toss the mixed greens with the dressing.
8. Slice the grilled steak into thin strips.
9. Arrange the mixed greens on a serving platter and top with the grilled aubergine slices and sliced steak.
10. Serve and enjoy your delicious steak and aubergine salad! Optionally, you can sprinkle some additional dried oregano and thyme on top for added flavor.
