Sweet Potato Black Bean Hash

Description

Sweet potatoes, avocado, and an egg couldn't create an even better breakfast recipe than this sweet potato black bean has.

Ingredient

- 2 medium sized sweet potatoes, peeled and diced

- 1 can of black beans, drained and rinsed

- 1 tablespoon olive oil

- 1 teaspoon chili powder

- 1 teaspoon cumin

- 1 teaspoon garlic powder

- Salt and pepper, to taste

Direction

1. In a large skillet, heat the olive oil over medium heat.

 

2. Add the diced sweet potatoes to the skillet and cook for about 5 minutes, stirring occasionally.

 

3. Once the sweet potatoes are slightly tender, add in the black beans and stir to combine.

 

4. Sprinkle the chili powder, cumin, and garlic powder over the sweet potato and black bean mixture. Stir to evenly coat everything in the spices.

 

5. Continue cooking for another 5-7 minutes, until the sweet potatoes are fully cooked and the black beans are heated through.

 

6. Season with salt and pepper to taste, and stir to combine.

 

7. Serve the sweet potato black bean hash hot, as a side dish or main dish. Enjoy!
