Description

Smooth, creamy pureed sweet potato helps thicken this queso, while the subtle sweetness adds more dimension to the flavor.

Ingredient

- 2 medium sweet potatoes

- 1 cup shredded cheese (cheddar or Mexican blend)

- 1/4 cup milk

- 1 tablespoon olive oil

- 1 teaspoon chili powder

- 1/2 teaspoon cumin

- 1/4 teaspoon garlic powder

- Salt and pepper to taste

Direction

1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Wash and peel the sweet potatoes. Cut them into small cubes and place on the prepared baking sheet.

3. Drizzle the olive oil over the sweet potatoes and sprinkle with chili powder, cumin, garlic powder, salt, and pepper. Give them a good toss to evenly coat.

4. Roast the sweet potatoes in the oven for 20-25 minutes, until they are tender and slightly crispy.

5. While the sweet potatoes are roasting, prepare the queso. In a small saucepan, heat the milk over medium heat until warm.

6. Add the shredded cheese to the warm milk and stir continuously until the cheese is melted and smooth. Remove from heat.

7. Once the sweet potatoes are done, transfer them to a blender or food processor. Add the cheese sauce and blend until smooth and creamy.

8. If the queso is too thick, you can add a little more milk to thin it out.

9. Taste the queso and adjust the seasoning as needed. Add more salt, pepper, or spices to your liking.

10. Serve the sweet potato queso warm with tortilla chips or use it as a topping for nachos, tacos, or baked potatoes. Enjoy!
