Taco Soup

Description

This quick and easy taco soup is made entirely in one pot in less than 30 minutes. Topped with cheese, avocado, and all the fixins, this simple soup makes the perfect weeknight dinner that'll please just about anyone.

Ingredient

- 1 can of black beans

- 1 can of diced tomatoes

- 1 can of corn

- 1 can of chicken broth

- 1 lb ground beef

- olive oil

- seasoning (such as salt, pepper, garlic powder, onion powder)

- dried spices (such as cumin, chili powder, paprika)

Direction

1. Start by heating a large pot over medium heat and drizzling in some olive oil.

 

2. Add the ground beef to the pot and cook until it is browned and fully cooked, breaking it up into small pieces as it cooks.

 

3. Once the beef is cooked, drain any excess fat and return the pot to the heat.

 

4. Add in the can of black beans (undrained), diced tomatoes (undrained), corn (drained), and chicken broth to the pot.

 

5. Stir everything together and bring the soup to a simmer.

 

6. Add in the seasoning and dried spices to taste, starting with a pinch of each and adjusting to your preference. You can add in more later if needed.

 

7. Let the soup simmer for about 10-15 minutes, stirring occasionally.

 

8. Taste the soup and adjust the seasoning as needed.
