This slow cooker pot roast only takes six ingredients to make thanks to a packet of onion soup mix. It gives the roast a ton of flavor without a ton of work, and no one will even know it’s there. The best part? You just dump everything into the slow cooker, walk away for a few hours, and dinner practically cooks itself. Serve it over egg noodles or rice and dinner is good to go.
- 3-4 pound beef chuck roast
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
1. Begin by heating 2 tablespoons of olive oil in a large skillet over medium-high heat.
2. Season the beef chuck roast with 1 teaspoon of salt and 1/2 teaspoon of black pepper on all sides.
3. Once the oil is hot, sear the beef chuck roast in the skillet for 3-4 minutes on each side, until browned.
4. Remove the beef chuck roast from the skillet and place it in the slow cooker.
5. In the same skillet, add the chopped onions and minced garlic. Cook for 2-3 minutes or until softened.
6. Pour in 1 cup of beef broth, 1 tablespoon of Worcestershire sauce, and 1 tablespoon of balsamic vinegar. Stir to combine.
7. Add 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, and 1 teaspoon of dried oregano. Stir to evenly distribute the herbs.
8. Pour the mixture over the beef chuck roast in the slow cooker.
9. Cover the slow cooker and cook on low for 8 hours or on high for 4-5 hours.
10. Once done, remove the beef chuck roast from the slow cooker and let it rest for 10 minutes.
11. While the roast is resting, pour the remaining juices from the slow cooker into a saucepan. Bring to a boil and let it simmer for 5 minutes to thicken the sauce.
12. Slice the beef chuck roast and serve with the thickened sauce on top. Enjoy your delicious and tender slow cooker pot roast!
