Tomatillo-Kiwi Salsa

Description

This bright green salsa with tomatillos and kiwi is fruity and refreshing. Serve with tortilla chips.

Ingredient

- 4 tomatillos

- 2 kiwis

- 1 small onion

- 2 cloves of garlic

- 1 tablespoon olive oil

- Salt and pepper (to taste)

- 1 teaspoon dried oregano

- 1 teaspoon dried cumin

- 1 teaspoon dried coriander

- Juice of 1 lime

Direction

1. Begin by preparing the tomatillos. Remove the husk and rinse them under cold water. Cut them into quarters and set aside.

 

2. Peel the kiwis and cut them into small cubes. Set aside.

 

3. Finely chop the onion and mince the garlic cloves.

 

4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add in the chopped onion and garlic and sauté for 2-3 minutes until they become translucent.

 

5. Add in the tomatillos to the skillet and continue to cook for another 5 minutes, stirring occasionally.

 

6. Once the tomatillos are soft, turn off the heat and let it cool for a few minutes.

 

7. In a food processor or blender, add the cooked tomatillos, kiwis, dried oregano, cumin, and coriander. Pulse the mixture a few times until everything is well combined.

 

8. Transfer the salsa to a mixing bowl and add in the juice of 1 lime. Season with salt and pepper to taste.

 

9. Mix everything together until well combined and taste to adjust any seasonings, if needed.

 

10. Serve the tomatillo-kiwi salsa with tortilla chips, on top of tacos, or as a topping for grilled chicken or fish.
