This tomato basil chicken dish is restaurant-quality, but you can make it at home. Serve on top of pasta or zoodles.
- 4 chicken breasts
- 4 medium-sized tomatoes
- 1 cup fresh basil leaves
- 2 tablespoons olive oil
- Salt and pepper
- Garlic powder
- Dried oregano
- Dried thyme
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius).
2. Begin by washing and patting dry the chicken breasts, then place them on a clean cutting board.
3. Season both sides of the chicken breasts with salt, pepper, garlic powder, dried oregano, and dried thyme. Use your hands to rub the seasonings into the chicken.
4. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil.
5. Once the oil is hot, carefully place the seasoned chicken breasts into the skillet. Cook for about 4-5 minutes on each side until they are lightly browned.
6. While the chicken is cooking, dice the tomatoes into small pieces and set aside.
7. Once the chicken is browned, transfer the chicken breasts to a baking dish.
8. In the same skillet, add the diced tomatoes and cook for 2-3 minutes until they are slightly softened.
9. Add the fresh basil leaves to the skillet and cook for an additional 1-2 minutes until the basil is wilted.
10. Pour the tomato and basil mixture over the chicken breasts in the baking dish.
11. Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes until the chicken is fully cooked and the juices run clear.
12. Remove the foil and bake for an additional 5 minutes to allow the top to brown slightly.
13. Once done, let the chicken rest for 5 minutes before serving.
14. Serve the tomato basil chicken with your choice of side dish such as rice, pasta, or roasted vegetables.
