Everyone loves a pasta bake and this one is sure to be a family favourite
- 1 lb pasta (any shape)
- 1 can diced tomatoes
- 1 cup mascarpone cheese
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 cup shredded mozzarella cheese
Instructions:
1. Preheat your oven to 375°F (190°C). Prepare a 9x13 inch baking dish by lightly greasing it with olive oil.
2. Cook the pasta according to package instructions until al dente. Drain and set aside.
3. In a separate pan, heat the olive oil over medium heat. Add the diced tomatoes and cook for 5-7 minutes, until they start to break down and form a sauce.
4. Stir in the mascarpone cheese, salt, black pepper, garlic powder, oregano, and basil into the tomato sauce. Cook for an additional 2-3 minutes, until the cheese is fully melted and the sauce is well combined.
5. Add the cooked pasta to the sauce and stir until well coated.
6. Pour the pasta and sauce mixture into the prepared baking dish.
7. Sprinkle the shredded mozzarella cheese evenly over the top of the pasta.
8. Place the baking dish in the oven and bake for 15-20 minutes, until the cheese is melted and bubbly.
9. Once done, remove from the oven and let it cool for a few minutes before serving.
10. Optional: Garnish with fresh herbs like basil or parsley before serving.
