- 1 box of Tunnock's Caramel Wafers
- 1/2 cup of all-purpose flour
- 1/2 cup of brown sugar
- 1/4 cup of olive oil
- 1 tsp of vanilla extract
- 1 tsp of baking powder
- 1/4 tsp of salt
- 1 tsp of cinnamon (optional)
1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease a 9x9 inch baking pan with olive oil.
2. In a large mixing bowl, mix together the all-purpose flour, brown sugar, baking powder, salt, and cinnamon (if using).
3. Slowly pour in the olive oil and vanilla extract into the dry ingredients and mix until a dough forms.
4. Take half of the dough and press it into the bottom of the prepared baking pan, making sure it is evenly distributed.
5. Take the Tunnock's Caramel Wafers and place them on top of the dough in the baking pan. You can break them in half if needed to fit.
6. Pour the remaining dough on top of the wafer layer and spread it evenly to cover the wafers.
7. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
8. Let the blondies cool in the pan for about 10 minutes before cutting them into squares and serving.
