Combine two winning dishes in this picnic-friendly vegetarian recipe of eggs coated in spiced, herbed chickpeas

Ingredient

-10 hard boiled eggs

-1 cup cooked and mashed potatoes

-1/2 cup breadcrumbs

-1/4 cup all-purpose flour

-1 tablespoon olive oil

-1 teaspoon dried parsley

-1 teaspoon dried thyme

-1 teaspoon dried oregano

-1 teaspoon garlic powder

-1 teaspoon onion powder

-Salt and pepper to taste

Direction

Instructions:
1. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a baking sheet with parchment paper.

2. In a mixing bowl, combine the mashed potatoes, dried parsley, thyme, oregano, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

3. Divide the potato mixture into 10 equal portions. Take one portion and flatten it on your palm, then place a hard boiled egg in the center. Gently wrap the potato mixture around the egg, making sure it is evenly coated. Repeat with remaining eggs and potato mixture.

4. In a shallow dish, mix together the breadcrumbs, flour, and a pinch of salt and pepper. Roll each potato-wrapped egg in the breadcrumb mixture, making sure it is coated evenly.

5. Place the scotch eggs on the prepared baking sheet and drizzle some olive oil over the top.

6. Bake in the preheated oven for 25-30 minutes, or until the breadcrumbs turn golden brown and crispy.

7. Once done, remove from the oven and let them cool for a few minutes before serving. Enjoy your vegetarian scotch eggs as a snack or as a side dish!
