- 4 eggs
- 1/4 cup milk
- 1/4 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 1/4 cup diced ham
- 1 tablespoon olive oil
- Salt and pepper to taste
- Dried parsley for garnish
1. In a large mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
2. Heat a non-stick pan over medium heat and add in the olive oil.
3. Once the oil is heated, add in the diced bell peppers and onions. Sauté for 2-3 minutes until they start to soften.
4. Add in the diced ham to the pan and continue cooking for another 1-2 minutes.
5. Pour the egg mixture over the sautéed vegetables and ham in the pan. Use a spatula to evenly spread out the mixture.
6. Sprinkle the shredded cheese on top of the egg mixture.
7. Cook the omelet for 3-4 minutes on one side, or until the edges start to turn golden brown.
8. Using a spatula, carefully fold the omelet in half and cook for an additional 1-2 minutes on the other side.
9. Once the omelet is fully cooked and the cheese is melted, remove from heat.
10. Serve the waffle omelet hot, garnished with some dried parsley. You can also add in some additional salt and pepper to taste.
