Watercress Tea Sandwiches

Description

Watercress tea sandwiches are traditional for fancy ladies’ luncheons, but they also make great party appetizers and are a quick-and-easy after-school snack for the kids.

Ingredient

- Sliced sandwich bread (white, wheat, or sourdough)

- Olive oil

- Watercress

- Salt

- Black pepper

- Garlic powder

- Onion powder

- Dried parsley

Direction

1. Preheat a pan or griddle over medium heat.

2. In a small bowl, mix together 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of dried parsley, a pinch of salt, and a pinch of black pepper. This will be your seasoning mixture.

3. Take 2 slices of sandwich bread and brush one side of each slice with the seasoning mixture.

4. Place the bread, seasoned side down, on the heated pan or griddle.

5. Let the bread toast for 1-2 minutes, or until golden brown.

6. Remove the bread from the pan and set it aside.

7. In the same pan, add a handful of watercress and let it cook for about 1 minute, until it wilts.

8. Remove the watercress from the pan and set it aside.

9. Take one slice of the seasoned bread and layer it with the cooked watercress.

10. Top with the other slice of bread, seasoned side facing inward.

11. Press down gently on the sandwich to seal it together.

12. Cut the sandwich into desired shapes, such as triangles or squares.

13. Serve and enjoy your watercress tea sandwiches!
