The taste of the Mediterranean shines through in this airy feta spread that's served with olive oil-marinated cucumbers.
- 8 oz feta cheese
- 1/4 cup olive oil
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- 1/4 tsp dried thyme
- 1 large cucumber
1. In a mixing bowl, add 8 oz of feta cheese and mash it with a fork until it becomes smooth and creamy.
2. Slowly pour in 1/4 cup of olive oil while continuously mixing the cheese.
3. Add 1/4 tsp of garlic powder, 1/4 tsp of dried oregano, and 1/4 tsp of dried thyme to the mixture. Mix well until all the ingredients are fully incorporated.
4. Taste and adjust seasoning as desired.
5. Using a vegetable peeler, peel the skin off of the cucumber. Then cut the cucumber into thin slices.
6. Place the feta mixture into a serving bowl and top it with the sliced cucumbers.
7. Drizzle a little olive oil over the top of the dish for extra flavor and presentation.
8. Serve chilled and enjoy as a dip with crackers or as a spread for toast. Optional: Garnish with fresh herbs like parsley or dill for added freshness.
