Forget cakes and cookies, mac and cheese is my comfort food of choice. And luckily, there is no shortage of variations on classic homemade mac and cheese, so it just never gets old. :) This White Cheddar Mac and Cheese is incredibly simple, fast, easy, and a little more well rounded than plain mac and cheese, so it’s totally meal-worthy and perfect for busy weeknights. The flavor is a little smoky, a little garlicky, and full of that wonderfully sharp white cheddar. In other words, soooo good!
-1 box of macaroni and cheese
-2 cups of chicken breast, diced
-1 head of broccoli, chopped
-2 tablespoons of olive oil
-1 teaspoon of garlic powder
-1 teaspoon of onion powder
-1 teaspoon of dried thyme
-1 teaspoon of dried oregano
-Salt and pepper to taste
1. Boil a pot of water and cook the macaroni according to the package instructions. Drain and set aside.
2. In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, garlic powder, and onion powder. Cook for 5-6 minutes until the chicken is cooked through.
3. Add the chopped broccoli to the skillet and cook for an additional 2-3 minutes until it becomes slightly tender.
4. In a small bowl, mix together the dried thyme and oregano. Sprinkle this seasoning mixture over the chicken and broccoli and stir to coat evenly.
5. In the same skillet, add the cooked macaroni and the cheese powder from the box. Stir to combine everything together.
6. Reduce the heat to low and let everything cook for an additional 2-3 minutes, stirring occasionally.
7. If the mac and cheese seems too dry, add a splash of water or milk to make it more creamy.
8. Serve the white cheddar mac and cheese with chicken and broccoli hot, garnished with some grated cheese and a drizzle of olive oil. Enjoy your delicious and easy to make meal!
