If there's any breakfast you should try, it has to be Wolfgang Puck's Fluffy Pancake Soufflé (Kaiserschmarren)!
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/4 cup olive oil
- 3 eggs
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon vanilla extract
- Powdered sugar (for dusting)
1. In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg.
2. In a separate bowl, beat the eggs until they are light and fluffy.
3. Slowly add the milk, olive oil, and vanilla extract to the eggs and mix well.
4. Gradually pour the wet ingredients into the dry mixture and stir until a smooth batter forms.
5. Preheat a large skillet over medium heat and lightly coat with olive oil.
6. Pour the batter into the skillet, forming a large pancake. Cook for 2-3 minutes, until bubbles start to form on the surface.
7. Carefully flip the pancake and cook for an additional 2-3 minutes on the other side.
8. Once the pancake is cooked through (you can check by inserting a toothpick in the center and it comes out clean), remove it from the skillet and place it on a plate.
9. Dust the top of the pancake with powdered sugar.
